2 large boneless, skinless chicken breasts- cut in 1" cubes
1/2 c. cornstarch
1/2 c, vegetable oil
2 eggs, beaten lightly
1/2 c. julienne carrot sticks
1/2 thin sliced red pepper
1/2 c. pineapple tidbits
Handful of snow pea pods.
1/2 c. green onion tops
2 T. cornstarch
2. T. water
salt and pepper
Sauce:
1 c. chicken broth
1/2 c. pineapple juice
1/3 c. sugar
1/3 c. apple cider vinegar
2 T. soy sauce,
2 garlic buds minced
1/4 tsp, grated ginger
1/4 tsp. white pepper

Heat oven to 325º. In a sauce pan whisk all the sauce ingredients together. Set aside.Pat the chicken cubes to dry and then put them in a large bowl or zip lock bag. Add salt and pepper and cornstarch and coat well. Beat the eggs in a small bowl or pie plate. Heat a Wok or a large sauce pan. Add the vegetable oil. Be careful not to burn yourself. Take the chicken a piece at a time and dip it in the egg and place it in the wok or sauce pan. do no crowd as you want them to brown. Turn and brown. they do not have to be fully cooked as they are going in the oven. Spray a 9"x 13" baking dish with Pam. Place the browned chicken in the pan. Set aside. Wipe the Wok or sauce pan and place a small amount of oil in it and bring up to hot. Add the carrots, red pepper and snow pea pod and stir fry until crisp and bright. Set aside.Heat the sauce to boiling. Mix the 2 T. cornstarch with the water and add to the boiling sauce stirring constantly as it thickens. You want it like a syrup. If it gets to thick thin with a little water. Spoon the sauce over the chicken.Sprinkle the pineapple tidbits over and place in the oven. Heat for about 20 min and then add the stir fried vegetables. heat another five minuets. Remove to serving plate and mix in the green onions. Serve over rice.

Chinese food really can't be made ahead. Just prepare all the ingredients and it will only take a few minuets to finish prior to serving,
