3/4 C. pecans
2 ripe peaches
4 C. baby spinach leaves, rinsed and dried
1/4 C. poppyseed salad dressing

Dressing:
1/3 C. raspberry vinegar
1 T. grated onion
3/4 C. sugar
1 t. dry mustard
1 t. salt
1 C. oil
1 1/2 T. poppy seeds

Directions:
Directions:
Preheat oven to 350º. Arrange pecans in a single layer on a baking sheet and roast in preheated oven for 7 - 10 minutes, until they just begin to darken. Remove from oven and set aside.

Peel peaches and slice into bite-sized segments. Combine peaches, spinach and pecans in a large bowl. Toss with dressing until evenly coated, adding a little additional dressing, if necessary.
