3 lb. apples (6 to 9), peeled, cored and cut into large 2-inch chunks (Jonagold, Pink Lady or Jonathan work well)
3/4 C. apple juice
2 - 3 T sugar, or to taste (omit if desired)
pinch of salt
cinnamon to taste (optional)

Combine all ingredients in slow cooker. Cover and cook until apples are very soft and beginning to disintegrate, 4 to 5 hours on low. At this point, the apples will start to darken just enough which adds to the flavor.

Mash apples with potato masher to your liking. If you want super chunky applesauce, just stir the apples until they have broken down but are still chunky. Season with additional sugar to taste if you like. Also, you can add more apple juice at this time to adjust the consistency.

Serve warm, at room temperature, or chilled.

Store in airtight containers in fridge for up to 1 week or it may be frozen up to 3 months.
