Dough ( Mix 1st 3 together and then add water as needed)
2 ½ C flour
1 egg yolk
¼ C extra virgin Olive oil
Enough water to make smooth soft dough

Filling (Mix together in large bowl)
9 large or extra-large eggs
1 C Parmesan cheese, grated
2 ½ C ricotta cheese
salt and pepper to taste – if desired.

Other ingredients (To be layered with cheese filling)
8 oz mozzarella, shredded
Basket cheese (1 small- you use a little over half of one usually)
½ lb each, sliced and cut in thin strips:
Proscuitta
Proscuitini
Boiled ham
Sopressata (1 sm. sweet) sliced

Makes 13 x 9 inch baking pan (like a lasagna pan)
(Preheat oven to 350 degrees)

Separate dough into a piece for the bottom and top. Roll out dough to a thin layer and cover pan with an inch or so hanging over sides. Put a little cheese filling on bottom of pan. Put a layer of each kind of meat and cheese and then spread some cheese filling over. Repeat until all the ingredients are used up. Roll out remaining dough and place over top of pan. Seal edges and cut little slits in top. Bake until crust is golden brown. Let cool until you can remove from pan (you may need to drain off some juice and put back in oven for a few minutes to dry up bottom crust) and then remove to cool the rest of the way before wrapping to refrigerate.
