1 lb. butter
4 c. flour
1 c. water
1 lb. almond paste
2 c. sugar
3 eggs

Directions:
Directions:
Work butter, flour and water like pie dough and refrigerate overnight. Divide dough into 6 parts after refrigeration.
Mix together almond paste, sugar and eggs. Form a soft paste and refrigerate overnight. After refrigeration, divide mixture into 6 parts.
Roll dough into thin long strips (6 of these). Put filling paste into a long strip down the middle of the dough. Roll up dough and paint with egg whites. You may leave dough as long shapes or form into crescent shape. Butter letter should be placed on ungreased cookie sheets. Bake 20 to 25 minutes at 350 degrees. They should be golden brown when finished.

No one makes butter letter like the Dutch. I remember as a kid buying it at the hardware store (homemade by the wife of the owner Verblaauw). Nana Troost would give us one for Christmas and I would hide it from the kids (now my mom is doing the same). Kim
