1-2 lb. okra
salt to taste
Canola oil to cover bottom skillet
1-2 c. cornmeal

Directions:
Directions:
Slice okra 1/4 in. or more thick, salt it and let set for a few minutes. This will moisten it. Cover bottom of electric skillet with canola oil and heat to 300-325º. Roll okra in corn meal (you can mix some flour with it if you prefer). Put in skillet and cover with lid, cook until tender and light brown on both sides.
