1 lb. yellow squash
1/4 c. butter
1 lg. sweet onion
1 med. red bell pepper
2 celery ribs, chopped
1 10 1/2 oz. can of cream of chicken soup
1 14 oz. can chicken broth
3/4 tsp. black pepper
1/4 tsp. red pepper
3/4 tsp. poultry seasoning
5 c. crumbled cornbread

Directions:
Directions:
Preheat oven to 350º. Cook squash just until tender. Drain well on paper towel. Melt butter in skillet, add onion, bell pepper and celery. Saute 8 to 10 min. until tender. Remove skillet from heat and stir in soup and next 4 ingredients. Gently stir in cornbread and squash, spoon mixture into a lightly greased 13 x 9 baking dish. Bake at 350º 40-45 min. or until golden brown.
