1/4 c butter or margarine
1/4 c flour
1/2 tsp salt
1/4 tsp ground mustard
1/8 tsp pepper
1 c milk (or a little more)
1 tsp dried minced onion
2 1/2 c cubed fully cooked ham
1 c frozen peas, thawed
2 hard-cooked eggs, chopped
Pastry for a single crust 9" pie

Directions:
Directions:
Melt butter in a saucepan. Mix together flour, salt, mustard and pepper. Stir into melted butter until smooth. Gradually add milk and onion. Bring to a simmer. Cook and stir constantly for 2 minutes or until thickened. Stir in ham, peas and eggs. Pour into an ungreased 9" pie dish or 8" square.
On a floured surface, roll pastry to fit top of dish; place over filling. Seal and flute edges; cut slits in the top. Bake at 400º about 25 minutes or until crust is golden brown and filling is bubbly.
