Porcini and Bacon Sauce Recipe

2 c. dried porcini mushrooms
2 c. boiling water
1/4 c. bacon chopped
2 shallots thin slice
Garlic cloves, sliced
1 lb. button mushrooms sliced
3 c. dry red wine
4 c. chicken broth
1 c. beef broth
Rosemary sprig
Roasting pan juices
1/4 c, butter (1/2 stick)

Soak dried mushrooms in water at least 30 min up to 2 hrs. Strain and reserve liquide
Saute bacon in large saucepan over med heat til golden. Add garlic and shallots and saute 3 min. Add fresh mushrooms and saute 8 min. Transfer half mushrooms to bowl. Add drained porcini and wine to pan and boil 15 min. Mix in all broth. Add porcini liquid (strain sediment). Boil then reduce heat and simmer until reduced to 5 cups about an hour and 30 min. Skim fat and add rosemary. Simmer 3 min. Discard rosemary. Can be make ahead 2 days.

Place reserved roasting pan with juices over 2 burners. Add mushroom-wine mix and bring to boil, scrape up bits. Strain back into same saucepan, press out all liquid. Simmer over med heat until reduce to 2 c about 5 min. Mix in reserved mushrooms from bowl. Whisk in butter. Season with salt and pepper.
