1 lb andouille sausage
1 whole rotisserie chicken
vegetable oil
3/4 cup all purpose flour
1 medium onion, chopped
1 green bell pepper, chopped
2 celery ribs, sliced
2 quarts hot water
3 garlic cloves, minced
2 bay leaves
1 tbsp worcestershire sauce
2 tsp creole seasoning
1/2 tsp dried thyme
2 tbsp paprika
1 tbsp salt
1 tbsp garlic powder
1 tbsp black pepper
1 tbsp onion powder
1 tsp cayenne pepper
1 tbsp oregano
1/4 tsp crushed red pepper flakes
1 tsp hot sauce

Directions:

cook sausage in a dutch oven over medium heat, 5 minutes or until browned. remove and set aside leaving the drippings in the pan.

add half a cup of oil to the pan and add flour and cook over medium heat, stirring constantly, 20-25 minutes, until roux is chocolate colored.

stir in onion, bell pepper, and celery and cook for 8 minutes. add 2 quarts of hot water, bring to a boil. reduce heat to low and add all other ingredients. Simmer for 2 hours.
