1-1/2 lb. lean ground beef
2/3 c. cracker crumbs
1/3 c. minced onion
1 egg
1/4 tsp. ginger
1-1/2 tsp. salt
1/4 c. milk
2 tbsp. corn starch
1/2 c. brown sugar
1 (13 oz.) can pineapple tidbits - drain and reserve liquid
1/3 c. apple cider vinegar
1 tbsp. soy sauce
1/3 c. chopped green pepper

Directions:
Directions:
Mix beef, crumbs, onion, egg, ginger, salt and milk and shape into 1' round balls.
Brown in large skillet until cooked. Remove from skillet and keep warm.
Pour fat from skillet. Mix corn starch and sugar, stir in reserved pineapple juice, vinegar and soy sauce until smooth.
Pour this mixture into skillet, cook over medium heat, stirring until thickens and boils. Boil and stir for 1 minute. Add meatballs, pineapple tidbits and green peppers.
Heat through.

Can serve as an appetizer with toothpick or serve over cooked rice.
