8 to 10 large Sea Scallops
Half a stick of butter cubed
Canola oil
Salt-and-pepper
Heavy cast-iron pan

Seared scallops are delicious and easy to make but there are a couple of tricks. First only use a cast-iron pan! This way they'll sear properly. Second make sure the scallops are dry. You cannot have any moisture on the scallops. Pat them down with a towel to make sure they're dry. Season with salt and pepper. Put your cast-iron to medium to medium high heat and splash and some canola oil and when the oil has a sheen on it add the scallops. Do not move the scallops after you've placed them in the pan. Look for a dark brown edge and you'll know it's time to flip them. Just before you flip them add the butter to the pan and let it cook for another minute or so. Turn your scallops and let the other side brown and remove from heat. Scallops cook very quickly. Be careful not to overcook.
