4 Cornish game hens
1/2 lemon
1/2 tsp. salt
1/2 tsp. pepper
1 6-oz. box long grain and wild rice
1 chicken bouillon cube
2 Tbsp. butter
3/4 cup mushrooms, chopped
1/4 cup onion, chopped
1/4 cup parsley, chopped
1/2 cup dried cranberries (optional)
1/4 cup slivered almonds, toasted
8 strips bacon

Directions:
Directions:
Rub cavity of hens with lemon and sprinkle with salt and pepper.

Prepare rice according to package instructions, adding a bouillon cube to water. Sauté mushrooms and onions in butter until tender. Add cranberries and heat thoroughly. Combine rice and mushroom mixture. Stuff rice into hens.

P;ace 2 strips of bacon (in an x) on top of each hen. Bake at 350º for 50 minutes.
