1/4 c. pineapple juice
1/4 c. sugar
1/4 c. lemon juice
2 eggs
grated sharp cheddar cheese
miniature marshmellows
maraschino cherries

Directions:
Directions:
Beat eggs in a double boiler until lemon colored, then add sugar. Add pineapple juice and lemon juice and cook until thick. Remove from heat. If to thick, thin with pineapple juice. Layer the salad in the following order:
pineapple in chunks
marshmellows
shredded sharp cheddar cheese
Maraschino Cheeries scattered
Make at least 2 layers, then cover with dressing and refrigerate - preferaby overnight.
Note: I usually double or triple this recipe.

Hazel Ferguson was a neighbor when I was young and my family lived in St. Louis, Missouri. This became one of my favorite dishes and soon became a staple on my families Thanksgiving and Christmas tables. It could easily be used as a dessert if desired.
