3.5 cups of hot water
1/2 cup honey
1/2 cup safflower oil
1/2 cup of buttermilk
2 large eggs
5 cups freshly milled soft wheat
1 cup freshly milled red spring wheat
2 cups high gluten bread flour
1 Tbsp. sea salt
1 Tbsp. dough enhancer
3 Tbsp. gluten
3 Tbsp. yeast
2 - 3 cups additional freshly milled hard white spring wheat (golden 86)

Directions:
1.) In Bosch mixing bowl, add all the ingredients, with yeast on top, except last amount of flour. Pulse until flour is completely moistened. Turn off and sponge for 15 to 20 minutes.
2.) Turn back on lowest speed while adding additional flour, until dough cleans the side of the bowl. Take off the splash ring, turn to next speed and kneed 3 to 5 minutes.
3.) Grease counter and hands. Shape into a ball, and cut through the dough into 3 even pieces.Roll each piece out into a thin rectangle. Spread with softened butter and generously sprinkle with a cinnamon sugar mixture. Roll up and cut into 12 to 15 equal pieces using a kitchen scissors. Place cinnamon rolls on a greased cookie sheet; set on stove top; cover and let rise till double in size.
Bake at 350º for 15 to 20 minutes; remove and put on wire racks.
Frost when cooled.

These cinnamon rolls are not your typical run of the mill cinnamon rolls. They will melt in your mouth and you won't be able to eat just one! An all time family favorite anytime of the year, but we especially enjoy them on Thanksgiving and Christmas morning.
