4 lbs cubed potatoes
3 cups chopped onions
3 cups chopped celery
1/2 cup finely chopped parsley
2 tbsp salt
1/2 lb butter
2 qt half & half
1/2 cup flour
1 cup water
2 tbsp. black pepper
Spaetzle noodles

Directions:
Directions:
Put enough water to cover onions, celery and parsley. Over high heat let it come to a boil. Turn heat to low and cook another 20 minutes. Add the cubed potatoes, salt and enough water to cover the vegetables. Combine flour and water to make a thickener and add to the mixture. Turn to med heat and when potatoes are nearly cooked add the spaetzle noodles. When both are done add butter, cream and pepper. Let the soup get hot again but do not boil.
