Ingredients:  
20 Tomatoes (whole large unpeeled cored)
4 C. Onion (chopped)
4 Carrots (large cut into sm pieces)
1 Celery (to taste & cut in sm pieces)
3/4 tsp. Pepper
1 Whole Jalapeņo with seeds (chopped)
1/2 C Parsley (chopped) or 1/4 C. dried.
3 tbsp. Sugar
1 tbsp. Salt
Garlic if desired (chopped)

Directions:
Directions:
Combine all in a heavy kettle and bring to a boil. Reduce to a simmer and stir often for 1-2 hours. Remove from heat. When cool, process into sauce with a blender or food processor. Can or freeze.
