1 cup ( 8 oz can) crushed pineapple in its own juice. (I use a bigger one)
3 cups flour
2 cups raw sugar
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
2 large eggs
1 egg white
1/2 cup safflower oil
2 tsp. vanilla
2 cups coarsely shredded carrots
1/2 cup applesauce

Directions:
Directions:
Heat oven to 350º. Drain the pineapple and reserve the juice. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt and cinnamon. Make a well in the center of the mixture and drop in the eggs, egg white, oil, vanilla, and reserved pineapple juice. Beat at medium speed until well blended. With a spoon, stir in the crushed pineapple, shredded carrots, and applesauce. Pour into your cupcake liners and bake about 22 minutes until toothpick comes out clean. Cool on a wire rack.
We love them served warm out of the oven with butter! I think I'm going to have to go make me some right now!!!!

We always served these moist and delicious muffins with our breakfast casserole and fresh fruit smoothies! Love fall and the holiday season...making memories to last a lifetime is the absolute best!
