½ c. quick-cooking grits - Kosher salt
3 slices white American cheese
½ c. shredded cheddar
8 oz. frozen pork or turkey breakfast sausage
2 T. olive oil
1 T. chopped fresh thyme
6 oz. mushrooms, halved (quartered if large)
6 oz. cherry tomatoes, halved ( we use canned tomatoes)
Pepper
1 scallion, trimmed and chopped

1. Bring 2 ¼ c. water to a boil in a medium saucepan. Whisk in grits and a pinch of salt and reduce heat to low. Partially cover and cook, stirring occasionally until thick and creamy, about 10 minutes. Remove from heat and stir in cheeses.

2. While grits cook, saute sausages according to package instructions.

3. Warm oil in a medium skillet over medium-high heat. Add thyme and mushrooms and cook, stirring occasionally, until mushrooms start to brown, about 3 minutes. Add tomatoes, season with salt and pepper, and cook 1 more minute, until lightly browned. Stir in scallion and cook 1 minute. Divide grits among 4 plates, serve with sausages and mushroom mixture.

This recipe reminds me of Sunday morning breakfast we had as children; hominy, grits, and link sausage, an English recipe from my great grandfather.
