Stew chicken in large soup pot until it is falling off the bones. I add salt, pepper and garlic to the chicken covered (about one inch over) with water. It usually takes about 1 to 2 hours. You can also do this step in a crock pot overnight.

Remove chicken from pot (or crockpot) and let cool. De-bone the chicken. Very yucky. Shred the de-boned chicken meat.

I run the broth though a cheesecloth or sieve. Then add the shredded chicken to the broth. Add sage and oregano. I add about 6 cups of water.

Tear up the eight can of biscuits and, as you tear them, place them in pot with chicken and broth. Stir frequently, As the dumplings start to cook they will fall to the bottom and you don't want to burn them. Simmer over low to medium heat for 1 hour, stirring frequently. You can taste the dumplings to test for readiness.
