4 c. grated, drained potatoes
4 T. grated onion
1 t. salt
1/2 t. pepper
2T. matzo meal or flour
1 cup vegetable oil

Directions:
Directions:
Grate potatoes in batches in cuisinart and drain. (Elissa hand squeezes grated potatoes in an old Poppa Louie handkerchief or schmata). Hand mix in egg, onion, salt, pepper and matzo meal (Delores uses flour). Heat half the oil in frying pan and drop in potato mixture by the tablespoon. Fry until browned on both sides. Keep pancakes hot until all are fried. Add more oil as required.
