Roasted Cauliflower Recipe

1 large head cauliflower
1 to 2 Tbsp. olive oil
1 tsp salt
1/4 tsp coarsely ground black pepper
1 tsp sugar
1/2 c shredded Parmesan cheese (optional)
Optional sauce to dip cauliflower in:
1/2 c mayonnaise
1/2 tsp curry powder
1 1/2 tsp catsup

Directions:
Directions:
Preheat oven to 400*
Rinse cauliflower and slice cauliflower to about 1/4" to 1/2" slices.
In large bowl or re-sealable plastic bag mix together cauliflower, salt, sugar and pepper. Stir to disperse seasoning over cauliflower. Add olive oil and stir or shake to cover cauliflower.
Spread in single layer on non stick baking sheet.

bake prepared cauliflower approximately 20 to 25 minutes, turning every 10 minutes. Cauliflower should be browned and tender. Remove from oven and serve warm or room temp.
If you use the Parmesan cheese, after baking 15 to 20 minutes and color changing on cauliflower, sprinkle cheese over cauliflower and bake another 5 to 10 minutes, until cheese is melted.
Remove from the baking pan immediately.
Mix together optional dipping sauce, and serve in a little dish.
