3 Dungeness crabs (buy them cooked & chilled)
Juice of 6 lemons
1 stalk celery - leaves and tenders (chopped)
2 T celery seeds
1/4 cup good extra virgin olive oil
4 T red wine vinegar
2 cloves garlic (minced)
Salt & pepper to taste

Detach legs
Remove crab body from shell
Discard all but the knuckles* (the part of the body where the legs attached)
Cut or break knuckles into 2 or 3 pieces (depending on how big the crab is)
Place legs and knuckles in a large serving bowl
Add celery, celery seeds, garlic, olive oil, vinegar and lemon juice
Add salt and pepper to taste
Toss to mix and coat well

Keep chilled until serving

*Some people do eat the muck inside the shell - but we don't use it in this salad

This one's from John's daughter Kellie. We serve it for all big family celebrations - usually after everyone has finished the main course. Sicilians generally eat their salads AFTER the meal...just to be ornery, I guess.
