2 Tbsp. olive oil
1/2 pound sliced mushrooms - any variety
3/4 cup chopped onion
2 garlic cloves, minced
4 boneless skinless chicken breast halves
Freshly ground pepper
2/3 cup dry white wine (substitute chicken broth if you wish)
1/2 tsp. dried Italian herb seasoning, crumbled
1/2 tsp. dried basil, crumbled
1/2 tsp. dried parsley flakes, crumbled
12 ounces jarred marinara sauce
Freshly grated parmesan cheese
1/4 tsp. dried red pepper flakes, crumbled

1 pound pasta, cooked according to package directions

Preheat oven to 350º

Heat oil in a heavy large skillet over medium heat. ad mushrooms, onion and garlic and cook until softened, about 5 minutes stirring occasionally. Transfer to a bowl using a slotted spoon

Add chicken to skillet (in batches if necessary). Cook until light brown, 2-3- minutes per side. Stir in mushroom mixture. Add wine, herb seasoning, basil and parsley. Reduce heat to low. Cover and simmer gently 5 minutes.

Transfer chicken and mushroom mixture to a 9 X 12-inch ovenproof glass baking dish. Spoon spaghetti sauce over chicken. Sprinkle with Parmesan and red pepper flakes.

Cover with foil and bake until juices run clear when chicken is pierced with a sharp knife, about 15 minutes. Remove foil and broil to brown top.

Serve immediately over cooked pasta, passing additional Parmesan.
