2 lbs ground chuck (85/15)
1 C plain breadcrumbs
2 large eggs
1/4 C grated parmesan cheese
1/4 C parsley
1/4 C warm water
2 cloves garlic, chopped
1 tsp salt
1 tsp pepper
Olive oil
Vegetable oil

Directions:
Directions:
Combine ingredients in large bowl. Add additional bread crumbs in water as needed. Mixture should be quite moist. Shape mixture into 2 inch balls. Heat oil in large pan. Use three parts vegetable oil to 1 part olive oil. Have at least three quarters of an inch of oil in pan. When oil is very hot, but not smoking, fry meatballs in batches. When bottom half of meatball is very brown and slightly crisp turn and cook top half. Remove from heat and drain on paper towels. Salt meatballs. You will use this pan (and oil) to begin gravy. Makes 20.
