-1 head cauliflower, about 2 lbs
-1/2 cup chopped onion

-To rice cauliflower, chop into florets and pulse in food processor fitted with grater disc. (If you don't have a food processor, cut cauliflower head in half, hold core and grate using the larger holes on the box grater.)

-Heat oil in large skillet over medium-high heat. Saute onion until soft. Add riced cauliflower, saute until just beginning to brown, about 10 minutes. Add peas or edamame until heated through.

-Season with your favorite seasonings. Minced garlic would add more flavor too.
