4 large baking potatoes
2/3 c butter
2/3 c all purpose flour
6 c milk
1 tbs salt
1/2 tsp black pepper
1/2 tsp white pepper
4 green onions, chopped and divided
12 slices bacon, cooked and crumbled
2 c medium cheddar cheese, shredded
2 c sour cream

1. Wash, dry, and prick potatoes with fork; oil skins lightly; bake at 375º for 65 - 75 min, until tender. Remove from oven and peel skin from potatoes while still hot. Cut into cubes 3/4 - 1" thick
2. Make a roux in a large stockpot; melt the butter over low heat, add flour slowly, stirring with a whisk until mixed thoroughly, about 1 min. Gradually add milk; cook over medium heat, stirring constantly with whisk until mixture is thickened and bubbly.
3. Add cubed potatoes, salt, pepper, 2 heaping tbs green onion, half the bacon and 1 c cheese. Cook until thoroughly heated.
4. Stir in 1 c sour cream. Add extra milk if necessary to achieve desire consistency.
5. Serve with dollop of sour cream, green onions, bacon, cheese.
