1 (15 oz) can black beans, drained and rinsed
1 (11 oz) can corn, drained
6 scallions, finely chopped
6 oz feta cheese
1/4 cup extra virgin olive oil
1/4 cup apple cider vinegar
pinch of sugar
fresh cilantro

Directions:
Directions:
Mix the first 3 ingredients together. In a small bowl, mix the oil, vinegar and sugar and add to the bean mixture. Gently stir to combine. Add the feta cheese.
Before serving, sprinkle with fresh cilantro.
Serve with tortilla chips.
