2 c. of sugar or 1 3/4 c. Splenda Blend
1/4 c. oil
2 Tbs. vanilla
juice of 1/2 lemon
1 tsp. salt
3 c. flour
1 1/4 tsp. soda
3 c. apples, peeled and chopped
1 1/2 c. pecans
3 eggs
cinnamon for sprinkling

Directions:
Directions:
Mix sugar, oil, vanilla, eggs, salt, and lemon juice in large bowl. Beat well. Sift flour and soda together, add slowly to first mixture. Add apples and pecans. Pour into a greased and floured tube pan. Sprinkle cinnamon on top. Bake for 1 1/2 hours at 325º.
