18 veal scallops, about 1 1/2 ounces each
Black pepper
2 tablespoons lemon juice
1/4 cup margarine
1 cup dry white wine
1/4 cup chopped fresh parsley
Fresh sage leaves, optional
Lemon slices, optional

Directions:
Directions:
Place veal pieces between two pieces of plastic wrap and pound to 1/4 inch thickness. Sprinkle with pepper an lemon juice. Cut each into 3 pieces. Melt margarine in 12 inch skillet over medium heat, being careful not to overheat. Add veal and saute about 30 seconds on each side. transfer veal to warm platter. Add wine and chopped parsley to skillet and cook until sauce consistency, about 2 minutes. Fan 5 to 6 veal pieces on each dinner plate. Top with sauce and serve, garnished with fresh sage and lemon slices, if desired. Makes 6 servings.
