Four eggs
1 1/2 cups of milk
Pinch of salt
Lemon or orange zest
1 Cup of flour sifted
1/2 stick of unsalted melted butter

Directions:
Directions:
Combine all ingredients and let sit for at least 30 minutes. Use a heavy griddle or very heavy pan on medium high heat to cook. Pour a very thin layer of batter into the pan and pick it up and move batter around to form a thin pancake. Turn only once. They cook very fast.

Variations include adding vanilla and varying the zest. I like the orange zest.
