Roll out to size of pie plate: 1 recipe pie dough (see recipe in this book)

8 tbsp. unsalted butter
1/2 c. packed light brown sugar
1/2 c. granulated sugar, plus 1 tbsp. for sprinkling
3 tbsp. cornstarch
1 tbsp. ground cinnamon
15 soft caramels
8 tart apples, such as Granny Smith, peeled, cored, and thinly sliced

Melt butter in large saute' pan. Add caramels and stir often until they melt.
Combine all dry ingredients, and mix them with the cut up apple slices.
Pour in the caramel and butter sauce, and mix it all. Put it all in the crust, cover with top crust and crimp edges. Use a knife to make a few slits to let the steam out. Bake at 425º, 40 to 45 minutes or until apples are tender and crust is golden brown. Cover edge of crust with 2- to 3-inch wide strips of foil after first 15 to 20 minutes of baking to prevent excessive browning. Cool on cooling rack at least 2 hours before serving.
