2 cups flour
4 eggs
1 teaspoon vanilla
1 teaspoon cinnamon
2 teaspoons baking soda
2 teaspoons baking powder
2 cups sugar
1 cup chopped walnuts (optional)
3 cups grated carrots
1 cup oil


Directions:

Mix ingredients together and pour into 2- 8 inch greased and floured cake pans
Or 1- 9 x13 inch cake pan
Bake at 350 for 35-40 minutes until cake tester come out clean

Frosting
1 8 ounce pkg. cream cheese
1 stick butter (soft)
4 cups [powdered sugar
1 teaspoon vanilla
Mix frosting ingredients on high, for 5 minutes and then spread on cooled carrot cake.

Top with chopped walnuts if desired
