Ingredients:
4 cups sliced fresh rhubarb 4 cups boiling water 1 ½ cups sugar 3 tablespoons flour 1 teaspoon tapioca

Directions: |
Directions:Place rhubarb in boiling water for 5 minutes and then drain In a bowl combine the sugar, flour and tapioca mix well and add the rhubarb Toss ingredients and set aside.
Make double pie crust or you can use store bought Place dough in pie pan and add the rhubarb mixture place 4 slices of butter on top of rhubarb and then add the top crust, Seal around the edges and make slits in the top crust for the air to vent out, Sprinkle cinnamon and sugar on top crust Place on cookie sheet and bake 400 for 15 minutes and then 350 for 50 minutes Let cool before serving |

Notes: Tip: Cover the edges of the crust with tin foil, or a crust cover so they do not burn You can also add 1 cup sliced strawberries for strawberry rhubarb pie . Note: I add 4 pieces of butter on top of the pie mix , before putting on top layer of crust, one for each of my children
