2 ¾ cup almond flour
1 cup sugar
½ teaspoon baking soda
1 cup (2 sticks ) butter
1 beaten egg
1 teaspoon almond extract
50 blanched almonds

Preheat oven to 325
Mix first 4 ingredients in a bowl, cut in the butter until it looks like cornmeal and
Add egg and extract and mix well
Shape into 1 inch balls and place 2 inches apart on a cookie sheet.
Place an almond on top of each cookie and press down until slightly flattened

Bake for 15-18 minutes

Tip: Almond flour is the secret , and can be found in health food stores, or grocery stores in the ethnic area
