Ingredients: 2-3 lbs Flank steak (this meat is tasty... but it really shrinks) 3 lge cans of diced tomatoes, 2 lge cans of tomato sauce; 1 sm can of tomato paste ¼ cup butter 1 onion (diced) Salt & Pepper (to taste), 1 tbsp chili powder (more if you like a little spunk), 1 tbsp onion powder, ¼ cup fresh parsley, 1 tbsp basil, 1 tsp thyme, 1 tsp sugar.

Directions:Pound steak with meat mallet. Layer butter on the side pounded with the mallet. Layer parsley, onion powder, 1 tbsp of chili powder, salt and pepper. Roll flank steak snugly like rouladen. Take kitchen twine and cut into strips and tie each end and across the middle. In a heavy skillet braise the steak in hot oil, creating a sear. Remove from pan and let it rest. In separate (or the same skillet if it's deep), combine all the tomato products, diced onion and remaining seasonings with a tbsp of olive oil. Bring to a gentle boil then reduce to simmering. Add steak to sauce (ensuring it is gently simmering) and cover for at least 1 hour. Prepare egg noodles according to directions. |

Notes: This was a family favorite and we never had enough. Strangely, there was a real oddity in that my mother tended to make this dish whenever the Wizard of Oz was playing on TV. The secret is in the chili powder, don't be shy.
