1 box of elbow macaroni (I like Barilla)
1 tsp of curry powder (Mom's hidden secret)
1 cup mayonnaise (you may need more depending on consistency)
1 medium sized red onion (minced)
6-8 hard boiled eggs
1 tbsp of salt
1 tbsp pepper
4-6 slashes of bacon (optional)
1 tsp of paprika as a garnish

Prep all veggies and eggs first. Cook macaroni to taste or tender; Mom liked her pasta soft. Mix all ingredients in a large bowl. This salad is best served fresh; however, it can be refrigerated. Use a dollop of mayonnaise if refrigerated to loosen up the salad.

I added the optional items only for those who want to change up the recipe; it is delicious without the extras. Mom used this recipe all summer...it was easy to make for a large family and it works well for potlucks. A gentle reminder...curry is the key, but too much would be regrettable.
