Baked Chicken and Dumplins Recipe

4 large chicken breasts, boneless
1 stick plus 4 T butter
1 1/2 C SELF-RISING flour
1 1/2 C milk
1/2 C sour cream
3 C chicken broth
1 can cream of celery soup
1/2 t rosemary or thyme leaves
salt & pepper

Directions:

1. Preheat over to 375º. In a large pot, place chicken, 4 T butter, salt and pepper. Cover with water, at least 2" over the chicken. Cover and bring to a boil over high heat. Reduce heat to simmer and boil chicken until tender, about 30 minutes. Remove chicken from water and let cool. When cool, cut or shred into pieces.

2. Melt stick of butter in 9x13 baking dish. Spread chicken on top of butter. In a separate bowl, whisk flour and milk together and pour evenly over top of chicken, scraping bowl. In the same bowl, whisk together 2 C chicken broth, soup, sour cream and rosemary. Pour this mixture over top of chicken and flour mixture.

3. Bake for 30-40 minutes or until golden brown. Let cool approx 15 minutes, then pour remaining 1 C chicken broth evenly over the top.
