2 boneless pork loins (approx 2 lbs. each)
1/4 C whole grain mustard
1/4 C shallots, chopped
2 bunches fresh sage leaves
1/4 C powdered sage
Salt & pepper

Directions:
Directions:
1. Preheat oven to 425º.

2. Combine mustard and shallots and spread on one pork loin. Season with salt and pepper. Place sage leaves over mustard mix, then sandwich with the other pork loin. Tie pork loins together at each end and in the center. Pat on powdered sage.

3. Bake for 10 minutes, reduce heat to 350º and continue cooking 60 more minutes (approx 15 minutes/lb.)
