Ingredients: Cookies: 1 Cup Butter 3 Tbs. powdered sugar 2 Cups Flour l/2 tsp Vanilla 1/2 tsp Lemon 1/2 tsp almond Filling: 2 Tbs butter, 1 Cup powdered sugar, lemon juice to give it a tang and also make it spreadable red and green food coloring

Directions:Cookies: Mix butter and powdered sugar by hand. Add Extracts. Mix in flour. Roll in small balls and flatten with fork. Bake at 350 degrees for 8 - 10 minutes, Watch closely. You do not want them brown. They should be a little darker than white. Let them cool thoroughly.
Filling: Divide filling ingredients into two batches, one with red food coloring and one with green. Mix until smooth. Take a kitchen knife and spread some on the bottom of one cookie and then place the bottom of a second cookie on top of it, let cool and then store in refrigerator. |

Notes: I make a couple small changes when I do the baking. I omit the vanilla and almond extract and increase the lemon. I also double the powdered sugar used. For the filling I don't use any food coloring, or measurements. I just mix until it tastes right.
