1 beef chuck pot roast (about 2 1/2 pounds)
Salt & Pepper
1 lb. potatoes (peeled russets or red potatoes, cut into chunks)
2 large carrots
2 stalks celery
1 medium onion, sliced
2 bay leaves
1 t dried rosemary
1/2 t dried thyme
1 can beef broth

Directions:
Directions:
1. Place potatoes, carrot, celery, onion and bay leaves in slow cooker. Sprinkle rosemary and thyme over vegetables.

2. Arrange beef over vegetables, season with salt and pepper, then pour broth over beef.

3. Cover and cook on low 8-9 hours, or high approximately 4 hours.

4. Remove roast to a platter, arrange vegetables around beef. Discard bay leaves. Serve with juices from cooker.
