2 lb whole okra, with stems trimmed to tender tops (be careful not to cut into the pod as they are extremely gummy)
2 15 oz can diced tomatoes or 4 med/lg fresh tomatoes, chopped
4 cloves garlic, chopped
1 lg onion, sliced
1/3 c cilantro, roughly chopped (not too small)
Olive Oil
Salt and pepper to taste

Heat 2-3 tbsp oil in a large skillet over medium-high heat. Add okra and cook, stirring occasionally until it starts to brown on all sides. Transfer to plate lined with paper towels.

Add onion to the hot pan and saute, stirring until it begins to brown. Add garlic and a pinch of salt and continue to saute for 1 minute. Add tomatoes and scrape any brown bits off the bottom of the pan.

Cut the stems off the okra and chop into 3/4 inch rounds. Add okra to the pan with everything else. Add cilantro and a little more salt and pepper. Cook for 3-5 minutes to let the flavors come together. Cook until the sauce starts to thicken a bit. Salt to taste.
