For one 8" layer:

1 cup flour
1 cup sugar
1 tsp. Baking soda
1 tsp. Baking powder
1/2 cup cocoa
pinch salt
1/3 cup oil
1 cup hot water or leftover coffee
1 egg
1 tsp. vanilla

Directions:
Directions:
Mix all dry ingredients together. Add wet ingredients and mix well. Pour into greased and floured cake pan.
Bake 25-30 minutes at 350 degrees until toothpick comes out clean when poked in the center of cake.

For (2) 9" layers, multiply recipe 3-4 times. Each recipe will make 14-16 cupcakes.
