2 T butter
1 medium onion, chopped
3 cloves garlic, chopped
6 zucchini, sliced into half moons, 1/4" thick
2 roma tomatoes, chopped
1/2 T dried thyme (1 T fresh)
2 T flour
1 t salt
1/4 t pepper
2 eggs, beaten
1/2 C milk (half-and-half can be used)
1/4 C grated cheddar
1/4 C grated Parmesan

1. Preheat oven to 375º. Grease an 8x8 casserole dish.

2. In a large pan over medium heat, melt butter. Saute onion and garlic 1-2 minutes. Add zucchini and tomatoes and continue to saute for about 5 minutes. Add thyme, flour, salt and pepper. Pour mixture into casserole dish.

3. In a medium size bowl, beat eggs and stir in milk. Pour over the zucchini and sprinkle with both cheeses. Bake for 30 minutes.
