4 medium tomatillos, husked, rinsed and quartered
4 large red or yellow bell peppers, seeded and chopped
2 poblano chile peppers, seeded and chopped
2 large white onions, chopped
4 cloves garlic, minced
1/4 tsp. salt
1/4 cup olive oil

Directions:
Directions:
Preheat oven to 350º. In a 9 x 13 inch pan, lightly toss together tomatillos, peppers, onion and garlic. Sprinkle with salt and drizzle with olive oil. Roast, uncovered for 1 hour or until mixture is slightly browned, stirring occasionally.
Cool mixture slightly. Transfer to a food processor or blender. Cover and process until smooth.
Freeze the mixture in ice cube trays or any small container that will hold about 2 Tablespoons. Cover with foil and freeze for several hours. Transfer the cubs to a freezer bag to be used later.
