1 1/2 c. rice (not instant)
1 pkg. dried onion soup mix

1 pkg. whole chicken, cut up
OR
2 lbs. boneless, skinless chicken (if you don't like dark meat and skin)

1 can (10 3/4 oz.) cream of mushroom soup
2 cans water

1st Option - With Bone:
Spray a 9" x 13" x 2" baking pan with non-stick spray. Mix rice and soup packet together; spread evenly in pan. Mix water and canned soup; whisk together. Pour 1/3 into rice and stir to moisten all pieces of rice. Place chicken on top of rice. Pour rest of soup and water over chicken and rice. Cover with foil. Bake at 350º for 1 1/2 hours. Uncover and bake for an additional 30 minutes.

2nd Option - Boneless Breast:
Spray a 9" x 13" x 2" baking pan with non-stick spray. Mix rice and soup packet together; spread evenly in pan. Mix water and canned soup; whisk together. Pour all of it into the rice and stir. Cover with foil and bake at 350º for 30 minutes. Take rice out of the oven, stir the rice and place chicken breast in pan, covering the breasts with rice. Add an additional can of soup mixed with some water. Cover pan with foil and bake for an additional 30 minutes, testing to make sure chicken is done.
