1 cup oil
3 eggs
2 cups sugar
2 teaspoons vanilla

2 cups shredded zucchini
8 1/4 oz. can of crushed pineapple
3 cups of flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1 1/2 teaspoons cinnamon
3/4 teaspoons nutmeg
1 cup chopped walnuts

Directions:

Beat oil, eggs, sugar and vanilla together. Add other ingredients.

Pour into two greased and floured loaf pans (5 X 9) and bake for 1 hour at 350 degrees.
