1 cup flour + ½ cup extra
1 teaspoon each salt, pepper and paprika
1 bottle of beer preferably Hayden's (best to have extra beers at the ready)
Allow ½ pound filets per adult (prefer Yellow Perch or Walleye)

Prepare Batter: Mix dry ingredients in a large bowl. Add 1 bottle of beer. Whisk ingredients together and place into fridge. Let sit for 1 hour. The batter may continue to thicken as it sits while you are frying fish. If so, add more beer to the batter.

Prepare Filets: Fish filets should be thawed and dried with paper towel. Lightly salt the filets. Add the additional ½ cup flour into a large ziploc bag. Shake/coat dried filets with flour and set aside.

Pre-heat oil in fryer to 350°. Canola oil is best. Place flour coated filets into batter and cover evenly. Gently place into fryer and cook for about 5 minutes or until golden brown.
