½ cup butter or margarine
1 cup sugar + 1 tbsp (3/4 cup in batter and ¼ cup in the egg whites)
¼ tsp vanilla
2 eggs, separated
1 ½ cups + 1 tbsp all purpose flour
1 tsp baking powder
1/3 cup milk
1 ½ cups blueberries

Preheat oven to 350ª.

Grease an 8 inch square cake pan. Cream butter and ¾ cups sugar, add salt and vanilla. Add egg yolks and beat until creamy. Combine 1 ½ cups flour and baking powder alternately with milk to egg yolk mixture. Beat egg white until soft peaks form, adding ¼ cup sugar 1 tbsp at a time, beat until stiff. Coat berries with 1 tbsp flour and add to batter. Fold in beaten egg whites. Pour into prepared pan. Sprinkle with remaining 1 tbsp sugar.

Bake 50 min or until tester inserted in the centre of the cake comes out clean.
