2 c. flour
1 t. salt
2/3 c. shortening
6 - 7 T. water

Directions:
Directions:
Stir together the flour and salt. Cut in shortening, 1/3 c. at a time. Add water, 1 tablespoon at a time, mixing with a fork. Continue adding water and stirring until mixture sticks together.

Divide into 2 balls and roll out on floured surface to desired size. Fold over and place in pie plate. Unfold pie crust in plate, evenly trim edges hanging over the pie plate, leaving 1/2 - 1 inch of pie dough. Fold extra dough under to be even with rim of pie plate. Crimp edges with knuckles on both hands.

Bake as directed in your pie recipe.

Personal Notes:
The less you handle the dough, the flakier and lighter the crust. I usually use butter flavored shortening instead of regular white shortening. While lard is not healthy and harder to find, it makes the flakiest and most tasty pie crust ever.
